Yummy scones

Having an easy going, lazy Saturday today....We all usually sit and relax during the weekend and either my husband or I fix some afternoon snack to have with milk (for the kids) and coffee. Since he was out today I decided to try his go-to for an afternoon coffee pairing, the chocolate chip scone. My kids love this more than chocolate chip cookies and since it's homemade, there are no additives or preservatives, add very little sugar. The only downside is they never last!!



Chocolate chip scones:

*ingredients:
2 cups (8 ounces) all-purpose or whole wheat flour
2 tablespoons (1 ounce) granulated sugar
2 teaspoons baking powder
1/4 teaspoon salt
1/4 cup (2 ounces) of butter, cut into small pieces
1/2 cup (3 ounces) chocolate chips ( or anything you desire, raisins, walnuts, almonds, dried cranberries...)
3/4 cups (4-5 fl ounces) natural yogurt or smetana

*for the glaze:
a little of the yogurt or smetana
golden granulated sugar

*preparation: (10 minutes)
Preheat the oven to 425 degrees F or 220 degrees C. Line a baking sheet with parchment paper. Sift together the flour, baking powder, sugar, and salt. Rub in the butter until the mixture resembles coarse crumbs. Add the yogurt or smetana. Mix again. Add the chocolate chips. Turn it out onto a slightly floured  counter or board and knead gently for 30 seconds to smooth the underside. Roll out the dough 1/2 inch (1.25 cm) thick into a circle and cut it into triangle shapes, or use a cookie cutter. 

Place the scones onto the baking sheet and brush with yogurt or smetana. Scatter with sugar and bake for about 12-15 minutes, until they begin to brown on the top. Cool and then eat or freeze (up to 3 months)

Yield: 10-12 scones
